Definitions:

Panning: This is when you physically follow (with your camera) the object in motion, resulting in a blurry background and a fairly focused object in motion.

Motion Blur: This is when you take a picture at a slower shutter speed so the camera catches the movment, and everything is blurred.

Freeze Motion: This is when you have a very fast shutter speed and the motion is frozen in place.
