Kansas City style barbecue is most easily recognized by the it's heavy sauces over slow cooked meat. Typically basted and soaked with tomatoe sauce or molasses, Kansas City style is very moist, very messy, and very desirable.
Kansas City is often declared to be the original capitol of barbecue in the world setting. There is a higher concentration of event and restaurants in Kansas City than nearly any other town out there.
Unlike Memphis style bbq, Kansas City style does not adhere solely to one type of meat. While fish is not included (due to the inland nature of Kansas City, pork ribs, beef ribs, smoked sausages, and brisket are all common meat choices for grilling.
What makes Kansas City style barbecue even more enjoyable is the variety and flavors of side dishes served as well, such as coleslaw, cornbread, corn, fries or wedges, and beans of sorts.
