Memphis style barbecue claims to be the best style in the world, and it has several traits to back up that delcaration. Memphis style barbecue is featured yearly at perhaps the largest festivals in the country, and displays many traits that make it unique from any other style of grilling.
Memphis style barbecue meat is almost always limited to pork in it’s various forms of sandwiches, ribs, and flanks. What is really most important to the style is the cut of meat, rather than the seasonings.
Memphis bbq is generally dry, meaning that the meat is usually cooked on it’s own, and not marianated or drenched in additional liquid. From time to time, a light mopping of seasonings may be added, but generally the succulent meat alone is enough.
Rubbing the meat is perhaps the most important part of memphis bbq, since the rub will blend with the juices of the meat cut to give it the flavor desired.
