New Orleans style barbecue is one of the more unique styles in the eastern united state, primarily because of the choice of meats being grilled, but also because of the sauces used.

The most common meat for New Orleans style grilling is shellfish and shrimp. However, larger seafood is also a popular meat for this style. Usually a citrus or light marinade is used to prepare the meat, where the acids of the fruits generally tenderize the meat pieces swiftly.

In addition to be the most seafood oriented barbecue style in the eastern United States, New Orleans style utilizes a variety of sides, such as fruit blends, special grilled pickles, and pasta.
