ABOUT NORTH CAROLINA STYLE

North Carolina style of grilling involves really no grilling at all. Rather, this style is a low-temperature smoke style where the meat is cooked very slowly, allowing the meat flavors to be embedded by the constant temperature, causing them to be strong throught all parts of the meat.

As with the Memphis style of barbecue, North Carolina style restricts itself to the various forms of pork. While chopped pork ribs is the most popular method of serving, but pulled pork sandwiches or salads are also common.

North Carolina style is very similar to the Memphis style also in the fact that it doesn't rely heavily of the use of sauces. Light, oil-based bastes and marinades are used.

Rubbing the meat is also a common method of North Carolina style bbq, since the rub will blend with the juices of the meat cut to give it the flavor desired and the long cook time allows them to soak deep within the meat.
