South Carolina has the earliest recorded history of BBQ.
ABOUT SOUTH CAROLINA STYLE
South Carolina style bbq is the grandfather of all styles, as well as the official melting pot in the barbecue society. Featuring four distinct flavors of sauces within this single style, South Carolina grilling is a favorite amongst many.
There is little to dispute in historical regards. South Carolina style was founded by the sudden immigration of those from foreign countries in the early foundings of the United States.
The four styles of sauces are oil based, light tomato based, heavy tomato based, and mustard based. Each of these four sauces are used throughout South Carolina grilling, and can be interchanged as needed. Because this style is dominantly a blend of a variety of cultures and flavors, there is no specific form of meat to use.
Rubbing the meat is perhaps the most important part of memphis bbq, since the rub will blend with the juices of the meat cut to give it the flavor desired.
